  • 1cup refind flour
  • 1/2 cup mawa
  • 1tbsp butter
  • Pinch of salt
  • Ghee for frying
  • 1/2 cup almond
  • 1/2 cup cashew
  • 2tbsp fennel seed
  • 2tbsp.melon seed
  • 1tbsp poppy seed
  • Some rose petals
  • 2tbsp.sugar
  • 1cup whipped cream
  • 2tbsp white chocolate mousse
  • 1tbsp saffron milk
  • 2-4 black pepper corn


This is the innovative recipe of thandai Gujia and chandrakala. I decided to make a new shape for regular Gujia. Instead of soaking in sugar syrup i am serving thandai mousse with it.


For thandai mixer

Add all the nuts,fennel seed,poppy seed,rose petals,sugar,black pepper in a Mixer jar and make a fine powder from it.

For thandai sticks

Add a flour,butter,Salt, in a bowl and knead a dough with the help of water and make a semi soft dough.

Make a mawa mixer with adding of thandai powder in mawa.

Roll the sheet and cut into rectangles fill with mawa mixer in it.

Roll it and join it properly now fry it in hot ghee till golden brown.

For thandai mousse

Add whipped cream in bowl,add prepared thandai powder mixer in it with soaked saffron in milk in it.

Mix it well,add choclate ganache in it.And now fill it in pipping bag for serving.

Now serve the dish

Add thandai mousse in short glasses and decorate it with sprinkle,loops,and serve with thandai sticks.
