Ingredients

  • 1 cup rice 2 cups assorted Vegetables (carrots, beans, mushrooms, baby corn, brocolli, cauliflower, bell peppers- red, green and yellow). 500 grams potatoes 250 grams spinach 1 cup boiled Kabuli chana 100 grams peas 100 gms sweetcorn 200 grams paneer 1 cup soya nuggets

Health and nutrition to tantalise your tastebuds. An array of vegetables each with a different taste and layout is not only a treat to watch but a king's feast on Diwali!

Directions

1.Boil rice and keep aside. At the time of assembling the platter saute rice in butter and add a

little chilli  flakes, salt and oregano.

 

2. Boil soya nuggets in water with a pinch of salt till they swell in size. When cool squeeze and keep aside. Later in  1/2 tsp butter add 1tsp of soya sauce 1.5tsp of hot and sweet tomato sauce and 1tso of Tomato sauce adding 1/4 TSP salt and a pinch of black pepper.

 

3. Cut paneer into 1 inch by 2 inches long and carefully toast them in butter on the tawa on both sides. Then insert a toothpick and keep them aside to be served with Szechuan sauce 2tbsp.

 

4. Take peas and sweet corn and saute them adding 1/2 TSP salt sniffing little chilli flakes, 2 pinches of chat masala and a squeeze of lemon.. keep aside.

 

5. Julliene 2 cups of vegetables ( carrots, beans, mushrooms, baby corn, brocolli, cauliflower, bell peppers- red, green and yellow). Saute them lightly adding 1/2 TSP of salt, 1/2 TSP of black pepper and 1 TSP of garlic oregano. Keep aside.

 

6. For the hara bhara kabaab, take 3 boiled potatoes and a cup of boiled Kabuli chana add 3 flakes of garlic finely chopped,  2 TSP coarsely broken peanuts, 200 gms blanched spinach leaves(drain out water completely) add 3/4tsp of salt , 1 tsp of dal makhni masala, 1/2 tsp of chat masala. Mix all the ingredients thoroughly. Make equal rounds and deep fry them . Keep aside.

 

7. Take the remaining raw potatoes and cut them into long french fries shape. Sprinkle a little cornflour and make crisp fries... Keep aside. Sprinkle a little piri piri masala and salt to it.

 

Grand finale..

Take a big platter and pile the buttered rice in the centre. The main object is to make the platter look colourful and appeasing. Arrange the remaining 6 items according to your fancy. Remember to keep all the items warm . Garnish the rice with tomatoes and onions and chopped coriander leaves.
