Papad vada
1.Papad
2.5 kg potatoes
4-5 spoon salt
1 spoon fitkari ( alum )
Water for boiling chips ( 3-4 litres )
Peal potatoes and make a chips with the help of chip cutter. Wash it very well .
Than in a big patila add water, salt and alum and boil it.
Than add chips and boil it for 3-4 minutes on medium flame.
Drain the water and sun dry chips atleast one day.
Chips is ready to fry. Store it in a air tight container.
2.For Vada
2-3 boiled potatoes
½ spoon salt
Pinch of hing
¼ spoon red chilli powder
½ spoon garam masala
¼ spoon dry mango powder
½ spoon coriander powder
¼ spoon cumin seeds
1 chopped onion
1 chopped green chilli
Coriander leaves
In a bowl mix all the ingredients. Mashed potatoes very well.
For batter
1 cup besan
½ spoon salt
¼ spoon red chilli powder
½ spoon garam masala
Pinch of hing
½ spoon coriander powder
Pinch of baking powder
30-40 ml water
In a bowl add all the ingredients and make a thick batter.
Oil for frying
Vada
Take a ball sized potato mixture. Dip in a besan batter and fry it on medium flame or till it turns in golden bown colour.
Make some besan crisper with remaining batter.
3.Green chili
5-6 chillies
Pinch of salt
Fry chillies in a hot oil for ½ minutes. Sprinkle some salt.
4.Garlic coconut chutney
1 teaspoon oil - can use peanut oil or sunflower oil
8 grams garlic or 22 to 24 small garlic cloves
2 teaspoons white sesame seeds
½ cup desiccated coconut
1 tablespoon kashmiri red chilli
powder
In a kadai add oil garlic and sesame seeds and roast it for 1 minute. Than switch off the flame and add coconut powder.
Cool down the mixture. And blend it.
In a pan add blended mix. Than add chilli salt and roast it for 2-3 minutes.
Chutney is ready.
5. Sweet chutney
1 cup amchoor powder
2 cups water
1 cup sugar
¼ cup jaggery powder
¼ spoon black salt
½ spoon salt
¼ spoon red chilli powder
Pinch of red food colour
1 spoon chopped cashew
1 spoon Chopped raisins
1 spoon melon seeds
1 spoon Corn flour
Add all the ingredients expect cornflour in a pan and cook it for 10-15 minutes on medium flame. Than add 3-4 spoon of water in a bowl and add cornflour.
Add cornflour mixture in a pan and cook it for 10 minutes in a low flame.
Red chutney Is ready...
6.Green chutney
1 bunch coriander leaves
1 bunch mint leaves
¼ cup curd
1 lemon juice
1 spoon salt
½ spoon chat masala
¼ spoon jeera
1 green chilli
1 onion
3-4 cloves garlic
3-4 spoon roasted channa
Add all the ingredients in a mixer jar and blend it.
In a plate place one papad than add green chilli chutney. Place vada on it and besan crisper. than add red chutney and coconut chutney thn place second papad on it.
Serve with fried chillies
