This is a recipe from Assam .Chicken is prepared using spices and black sesame seeds .Only Ginger ,onion ,garlic ,turmeric powder ,salt to taste and black sesame seeds paste .The recipe is very healthy ,easy to cook and has an appeal to the taste buds and its unique colour makes it special .
1)Cut the chicken in to medium pieces
2)Add ginger garlic paste to the washed and cut chicken and leave for marinating in the refrigerator for 2-3 hours
3)Take some Black sesame seeds and roast it in a KadaI /pan to yield about a cup in powdered form or after grinding .You have to roast the sesame seeds in medium flame for about 7-8 minutes and keep stirring till the seeds turn little crispy ,but make sure you do not overdo it as it will give a bitter taste if the sesame seeds are over done .Take the seeds out of the KadaI /pan after done and let it cool .Grind the roasted seeds in a grinder to make it powdery .
4)Heat mustard oil in the KadaI ,add the diced onions and fry till golden brown ,add turmeric powder ,and add the marinated chicken to the oil .Add the whole black peppers and the black pepper powder after about 10 minutes . Keep frying in low flame with occasional Stirring till about 20-25 minutes Or till the chicken is almost cooked .Add little sugar and add the black sesame powder to the chicken .Stir it properly and fry for 2-3 minutes .Add boiled water to the chicken as per your requirement .Add salt as per taste.If you want to keep it a little thick add less water .Bring it to boil and then simmer for 5- 10 minutes or till done
5).Serve hot with steamed rice or roti.
