This is a delicious recipe with chicken kofta prepared in a rich gravy. This recipe has background of Rampur, Uttar Pradesh.
For chicken koftas :
In the minced chicken add coriander , mint, dhania powder, ginger garlic paste (1 spoon), egg, green chillies cut into small pieces. Mix everything and oil your palms. Then make balls of the chicken and stir fry them in a pan.
Tip : you can steam the koftas too if you want them to be preserved for later.
For the gravy:
fry the cashews and almonds in oil.
Now add them along with fried onions, curd in a grinder and make a smooth paste. In the same oil add this paste and sauté for 3-4 mins. Then add the tomato paste, coriander powder, salt, garam masala powder and sauté till oil separates from the mixture. Once oil separates, add the koftas and cook on medium flame for 5 mins. Then add half cup water and cook on low flame for 10 mins.
Your delicious Kofta chicken curry is ready.
Serve with Naan or rice.
