This simple chicken curry recipe can be made tastier with just a little twist in its cooking style. Two hours before you start cooking marinate the chicken pieces in the whey. Whey is the leftover water when you make paneer/cottage cheese. So instead of throwing away the water while making paneer, use it as chicken marinade.
After the two hour time period of chicken marination, you can start the cooking process.
Heat oil in a kadai. Add bay leaves and black pepper corns. Once you get the aroma of these spices, add the thinly sliced onions. Fry till it turns brown.While frying the onions add the dried red chillies. Now add ginger garlic paste and roast till the raw smell is gone. Then add chopped tomatoes and the chilli, coriander and turmeric powder. Fry till the oil starts separating from it. Now add the marinated chicken and mix well. Add water and salt as per taste. Cover the kadai with a lid and let the chicken cook for a while. In about 10-15 minutes, the chicken would be cooked. Once a layer of oil settles on top add chopped coriander before turning off the gas. Serve hot with rice/roti.
