Tantelizing shami kabab
Chana Dal Shami Kebab....
Recipe...
2 cup Chana dal soaked 5 to 6 hrs or overnight...
1 medium sized, onion
2 Red whole chilli...
1 green chilli...cut in two pcs
1 black cardamom
4 cloves
1 Bay leaf
1 One inch cinnamon stick...
1tsp cumin seed
6 to 8 pcs black pepper
1 tbsp ginger garlic paste
1 tsp Turmeric powder
1 tsp Coriander powder
1tsp red chilli flakes
1tsp salt
Boil all of this in a pot...
With 2 cups water
Till the Dal gets softened ....you can touch the dal and feel its tender enough and can be crushed by your finger...
Discard the bayleaf...
Grind all the mixture
Boil 2 medium sized potato for binding...
Once the batter is ready
Now mash all the ingredients together with potato....
Add chopped coriander and green chilly as per your liking..
Add 1 egg to the batter mix well and keep in Refrigerator for 30 mins or so...
Batter is now ready ....
Take water in a bowl
Wet your palm shape the kebabs and fry....
Best on sim in a non stick pan...
Turn and toss carefully
as they are quite fragile...
Serve with Garlic Yoghurt dip and green chutney ....
And some cucumber lettuce vignairette...
Had some chickpeas sauted them and paired them with mint leaves ....made little skewers
